I've tried a fried udon at a Japanese restaurant with mayonnaise dressing. It sounds weird but I tried and feel nice with the taste. So I make my own version today~ a combination of mayonnaise and miso.
Ingredients
- Udon noodle 乌冬面
- cabbage 包菜
- gobo/greater burdock 牛蒡
- oyster mushroom 蚝菇
- bean curd sheet 腐竹
- onion 洋葱
- bonito flakes 柴鱼片
- dark soy sauce 黑醬油
- mayonnaise 美奶滋
- sugar 糖
- black pepper corn 黑胡椒粒
- miso paste 味噌
- plain water 清水
Steps
- Soak the bean curd sheet into water to soften. 腐竹泡软待用。
- Grind the pepper corn into chunks. 胡椒粒磨成碎粒。
- Put the dark soy sauce, mayonnaise, sugar, miso paste and a little plain water into a bowl and stir well. This will be the dressing sauce. 將黑醬油﹑美奶滋﹑糖﹑味噌和少许清水放入一碗攪勻成调味酱。
- Chop the onion. Cut other vegetables to desire size. 洋葱切末,其它蔬菜切成喜欢的大小。
- Heat up the pan with some oil. Sauté the pepper chunks a little while to enhance the aroma. Then add the onion. 爆香胡椒碎粒,然后加入洋葱。
- Toss in other ingredients. 加入其余材料兜一下。
- Toss in the noodle and stir well. 倒入麵條拌勻。
- Pour the dressing sauce and stir evenly. 加入调味酱炒勻即可。
- Sprinkle some bonito flakes on top when serving. 上桌时洒上柴鱼片。
