Home Made Pasta in White Creamy Sauce



I like the salmon in soup, especially in Japanese cuisine. The one I usually ordered was in Miso soup, but I like to have a try with white milky soup, since I need to clear my milk powder sooner as I can.....haha...

Ingredients

Home Made Pasta Dough

  • 160g of all-purpose flour    160 克普通面粉
  • 2 eggs    2 颗蛋
  • 2 tea spoon of cooking oil    2茶匙菜油
  • a pinch of salt    少许鹽

Vegetable & Chicken White Sauce

  • tomato    番茄
  • carrot   胡萝卜
  • napa cabbage/chinese cabbage     黄芽白/大白菜
  • bean sprout    豆芽
  • bunashimeji    灵芝菇
  • enokitake    金针菇
  • cauliflower    包菜花
  • broccoli    西兰花
  • onion    洋葱
  • garlic    
  • chicken fillet    鸡柳
  • corn flour    玉米粉
  • margarine/butter    黄油/牛油
  • milk    牛奶
  • oreagano    牛至
  • salt    盐
  • pepper    胡椒
  • rice/ginger wine    米/姜酒

Steps 

Home Made Pasta Dough

  1. Mix all the ingredient evenly into a smooth dough.     把所有材料混合揉成光滑面团。
  2. Rest the dough for an hour.    休面约1小时。
  3. Coat the dough with some flour. Roll the dough through the roller to the desired thickness. Coat the rolled sheet with flour again, then send through the cutter or simply use the knife to cut it into thin slices. There you have the pasta. (Always coat the pasta with some flour so they won't sticking each other)    面团先洒上一层面粉,用压面机杆面团至你要的厚度。再洒上一层面粉,然后放入压面机的切面刀切成面条状;或用刀子割成面条状(面条得撒上些粉以免沾在一起)。
  4. Cook the pasta in the boiling hot salt water to the desired tenderness. The pasta is ready to use.    把面条放入滚烫的盐水里煮至喜欢的硬软程度,即可拿来用。

White Creamy Sauce

  1. Cut the ingredients into desire size.    把材料切成喜欢的大小。
  2. The chicken marinate with some corn flour to create a tenderness texture.    切好的鸡柳用玉米粉腌一会儿。
  3. Heat up the pan with margarine/butter. Saute the onion and garlic.    热锅煮溶黄油/牛油爆香洋葱和蒜。
  4. Put in all the vegetable (except bean sprout and tomato) and chicken to cook.    将其它材料(除了豆芽和番茄) 和鸡柳加入煮。
  5. Pour the milk into the pan and bring to boil.    牛奶倒入锅里煮滚。
  6. Pour in the cooked pasta and stir well. Then add tomato.    加入煮好的面条搅匀。然后放入番茄。
  7. Season with salt, pepper, oregano and rice/ginger wine.    以盐、胡椒、牛至和米/姜酒调味。
  8. Thicken the sauce with some cornflour+water mixture.    酱汁打芡。
  9. Sprinkle the bean sprouts on top.    最后洒上豆芽。
