Wholemeal Pizza with Vegetable and BBQ Chicken



I bought a pack of organic wholemeal high-protein flour. So I decided to make a healthier pizza dough by adding some of this flour. And this pizza will be my hubby's special birthday pizza instead of cake....

Ingredients 

Pizza Dough (The quantity is enough for 2 regular pizzas)

  • 1 cup of high-protein  flour    1 杯高筋面粉
  • 1 cup of wholemeal high-protein  flour    1 杯全麦高筋面粉
  • 2 tea spoon of custard sugar    2 茶匙砂糖
  • 1 tea spoon salt    1 茶匙盐
  • 1 tea spoon  of instant yeast    1 茶匙速溶酵母
  • 3/4 cup of warm water    3/4 杯温水
  • 1 table spoon of cooking oil    1 汤匙菜油

Tomato Paste

  • Chopped garlic    蒜米
  • Celery    西芹
  • Tomato    番茄
  • Oregano    牛至
  • Salt & pepper    盐和胡椒
  • Plain water    水

Topping 

  • Capsicum    灯笼辣椒
  • Broccoli    西兰花
  • Chicken fillet    鸡柳
  • Char Siew BBQ sauce    叉烧酱
  • Mozzarella shredded cheese    披萨芝士
  • Sweet corn kernel    玉米粒
  • Mayonnaise    美奶滋
  • Oregano    牛至  


 Steps 

  1. Marinate the chicken fillet with Char Siew BBQ sauce and keep in chill.    鸡柳以叉烧酱腌制再冷藏。
  2. Cut the broccoli, capsicum into desired size.    西兰花和灯笼辣椒依喜好切块。
  3. Put the sifted high-protein flour, wholemeal high-protein flour, sugar, salt, yeast, cooking oil, warm water into a mixing bowl and knead into a rough dough by hand.    把筛过高筋面粉、全麦高筋面粉、糖、盐、酵母、菜油、水全都倒入盘用手揉成一团。
  4. Knead the dough with the mixer until it turns to even and smooth texture.     用搅拌机揉面团至均匀光滑。
  5. Roll the dough into a ball. Let it sit in a warm spot and goes for first proofing, until it grows 2 times bigger (approximate 60 minutes).     把面团搓成球状,置在温暖处发酵胀大至两倍大 (约60分钟)。
  6. While waiting, prepare the tomato paste. Heat up the pan with a little cooking oil. Saute the garlic. Then add the celery and tomato to cook. Pour in the water and cook until boiled. Leave them to cook a while. Sprinkle some oregano, salt and pepper to taste. Blend and drain the paste. The tomato paste will be used for our pizza later, while the extracted juice can use as the stock for your next meal.    在发酵时先准备番茄酱。烧热锅下点油爆香蒜米。再加入西芹、番茄炒香。倒入水煮滚后继续煮一会儿。撒进牛至、盐、胡椒。用搅拌机搅烂成糊,隔汁取糊即是番茄酱。而过滤的菜汁下回可以当高汤用。    
  7. Knead the pizza dough to remove the formed air. Roll the dough into a ball again.     把面团取出排气,搓成球状。
  8. Cut the ball into 2 equal parts and roll into smaller balls. If you happen to use 1 only, keep the balance in a zip bag and put into the freezer.    把面团分2份,在滚成2个球状。如果只用一份,另一份放进密封袋进冰格冷藏
  9. Use both hands to stretch the ball into a flat circular base and place it in the baking tray. Use a fork to make holes on the surface.   将小球以双手扯开弄平成一个圆形,置入烤盘。用叉子刺洞洞。
  10. Spread the tomato paste.      表面涂上一层番茄酱。
  11. Put a layer of mozzarella cheese. Follow by chicken fillets, capsicum, broccoli, sweet corn kernel then mayonnaise. Seasoning with oregano. Spread the mozzarella cheese on top.    放一层披萨芝士,接着鸡柳、灯笼辣椒、西兰花、玉米粒和美奶滋。撒上牛至,再铺上一层披萨芝士。   
  12. Bake at 180°C for 15-20 minutes. Serve while it's  hot.    180°C烤15-20分钟趁热吃哦!
