Amaranth and Tofu Soup


Amaranth or chinese spinach (苋菜) is full with nutrition and mineral that is beneficial to our body. This leafy vegetable can be prepared instantly due to it cooks in a short time. So here is a simple way to serve the amaranth in soup.

Ingredients

  • pork ribs    排骨
  • dried scallop    干贝
  • konbu    昆布
  • red dates    红枣
  • chinese wolf berries    枸杞
  • amaranth    苋菜
  • bunapishimeji     白玉菇
  • tofu    豆腐
  • salt    
  • pepper    胡椒粉
  • plain water    清水

  Steps 

  1. Soak the red dates and chinese wolf berries into hot water until they soften enough.    红枣和枸杞浸热水泡软。
  2. Cut ingredients into desire size.    把材料切成喜好的大小。
  3. Boil a pot of plain water, put the pork ribs and dried scallop in to make the stock.     排骨和干贝加入清水里熬成高汤。
  4. Then put in other ingredients.    加入其它材料。
  5. Season with salt, pepper.    以盐、胡椒调味。
