My boy's kindergarden going to have a concert rehearsal on coming Sunday. The principal asking the parent's favor to sponsor some food on the day. Thus I make some mini chocolate tarts for the event.
Ingredients
Tart Crust
- 150g of butter (Out from the fridge and keep in room temperature for about 10 minutes) 150 克牛油 (从冰箱取出等约10分钟后再操作)
- 30g of custard sugar 30 克砂糖
- 1 egg 1 颗蛋
- 250g of all-purpose flour 250 克普通麵粉
- 1 table spoon of milk powder 1 湯匙奶粉
Chocolate Filling
- 1+1/8 cup of cocoa powder 1+1/8 杯可可粉
- 1 + 3/8 cup of condensed milk 1+3/8 杯炼奶
- 3/8 cup of cooking oil 3/8 杯菜油
- 3/8 teaspoon of vanilla extract 3/8 茶匙香草精
Chocolate-coffee Frosting
- 2/3 cup of creamwell 2/3 杯克玛芝淋忌
- 1/2 cup of condensed milk 1/2 杯炼奶
- 1/4 teaspoon of vanilla extract 1/4 茶匙香草精
- 1 teaspoon of cocoa powder 1 茶匙可可粉
- 1 teaspoon of coffee powder 1 茶匙咖啡粉
Steps
Tart Crust
- Place the butter and icing sugar into a mixing bowl. Mix the mixture using hand-mixer until it turns to lighter color. 牛油和糖粉置入一碗﹐用搅拌机打至发白。
- Add the egg into the mixture and beat until there are well blended. 加進蛋打勻。
- Add the milk powder and stir well. 加入奶粉搅匀。
- Sift in the flour and knead it into a dough by hand. 筛入面粉手揉成一面团即可。
- Chill the dough in the fridge for about an hour. 麵团冷藏1小時。
- Place the paper strip in the center of every mini mold, in order to lift up the baked crust easily. 迷你塔模中间置入一张油纸条以方便把烤好的塔拿起。
- Cut the dough into 31 pieces (~15g each) and roll into balls 面团割成31份(每份约15克),揉成球状。
- Place a ball in the center of tart mold. Use the finger to press and shape the tart crust. 把一份球面团放再模的中间,以手指按压造型。
- Chill the tart crust in the fridge for about 30 minutes. 将塔皮进冰箱冷藏30分钟。
- Bake the tart crust at 200°C for 20-25 minutes. 用200°C烤约20-25分钟。
- Let the tart crust cold down and lift up from the mold. 让塔皮冷却取出。
Chocolate Filling
- Bring a pot of water to boil with low heat. 以小火 煮开一锅水。
- Place all the ingredients into a bowl, the bowl then place on top of the boiling pot. Stir the mixture to a smooth and glossy texture. 将所有材料倒入一碗,用手一直搅拌巧克力糊直到丝滑又有光泽。
Chocolate-coffee Frosting
- Place all the ingredients into a mixing bowl. Beat the mixture to a fluffy, smooth and glossy texture with hand mixer. 将所有材料倒入碗,用搅拌机打发,变滑又有光泽。
Assemble
- Scoop the chocolate filling into the tart crust. 舀些巧克力酱入塔皮。
- Pipe the chocolate-coffee frosting on top. 挤些装饰奶油在上面。
- You may decorate the tart with candies, cookies and etc. 你可用装饰糖、饼干等等来装饰。
