Ban Mee/Mee Hoon Kway (板面/面粉馃)



Ban Mee or Mee Hoon Kway is my favorite noodle, especially made by my mom. She uses anchovy/ikan bilis (江鱼仔) stock, shredded  chicken, fried anchovy/ikan bilis,  sauropus androgynus/sayur manis (树仔菜) to cook the said noodle. Anyway, I make some changes on the ingredient in my version. So here's the recipe:

Ingredients

Dough

  • all-purpose flour    普通面粉
  • water    水
  • a pinch of salt    少许鹽

Soup



  • anchovy    江鱼仔
  • dried scallop    干贝
  • garlic    蒜
  • cabbage    包菜
  • chicken fillet    鸡柳
  • sauropus androgynus    树仔菜
  • salt & pepper    盐和胡椒

 Steps 

  1. Boil the anchovy/ikan bilis and dried scallop in a pot of water for about 30 minutes. This will be the stock for later use.    以江鱼仔和干贝熬约30分钟成高汤。
  2. Mix all the dough ingredient evenly into a smooth dough.     把所有材料混合揉成光滑面团。
  3. Rest the dough for an hour.    休面约1小时。
  4. Roll the dough through the roller to the desired thickness.    用压面机杆面团至你要的厚度。
  5. Tear the dough into thin pieces and drop into the boiling water (added with oil). Once the cooked dough pieces floating up to the surface, move them  to cold water immediately to stop the cooking process.    手撕薄片放入煮滚的水(已加了少许油)煮至浮上水面,捞起放入冷水冷切。
  6. Heat up a pan with a touch of oil. Saute the garlic.    起锅加些油爆香蒜。
  7. Pour in the stock and bring to boil, then add the cabbage and the chicken.    加入高汤煮滚,然后放包菜和鸡柳。
  8. Move the chicken fillet out from the pan once it's cooked, and set aside. Tear and shred the fillet.    鸡柳煮熟捞出放凉,再撕碎片。
  9. Add the sauropus androgynus/sayur manis into the soup to cook a while. Seasoning with salt and pepper, off the heat.    树仔菜放进里滚 一会。放盐和胡椒调味,熄火。
  10. Pour the soup and the ingredients into a bowl of the ban mian, place some shredded chicken on top.    汤和料倒入板面,上面放上鸡丝。
