It has been a long time I didn't make the Lasagna. Well, this time I'm going to make my own fresh pasta instead of buying the pre-packed from supermarket. You may buy the wheat flour specifically for pasta-making, but I'm using simple all-purpose flour. Here's the recipe.
Ingredients
Pasta
- 150g of all-purpose flour 150 克普通/中筋面粉
- 1 egg 1 颗蛋
- 1/2 table spoon of cooking oil 1/2汤匙菜油
- 1/8 tea spoon of salt 1/8 茶匙鹽
- 25g of water 25 克水
Filling
- chopped onion 洋葱叮
- chopped garlic 蒜茸
- diced carrot 胡萝卜叮
- sweet corn kernel 玉米粒
- crab stick 蟹柳
- minced meat 绞肉
- diced button mushroom 蘑菇叮
- butter 牛油
- instant mushroom soup powder 速溶蘑菇汤粉
- oregano 牛至
- a touch of salt and pepper 少许盐和胡椒
- tomato puree 番茄泥
- shredded cheese 刨丝芝士
Steps
Pasta
- Place the flour,egg, cooking oil and salt into a mixing bowl. Pour the water bit by bit while kneading. Stop when the dough is smooth. Knead it for about 5 minutes. 把面粉、蛋、油、盐置入碗里。水一点一点加入,混合揉成光滑面团即停止加水。继续揉5分钟。
- Rest the dough in fridge for 30 minutes. 冷藏休面约30分钟。
- Divide the dough into 6 portions. Coat them with some flour. 面团分成6份,铺上面粉。
- Roll the dough through the roller to the desired thickness. Cut the pasta according to the size of the baking tray. 用压面机杆面团至你要的厚度,依据烤盘大小裁出合适的尺寸。
- Cook the pasta in the boiling water few minutes. Move into cold water. Dry the pasta with kitchen towel. 把面皮放入滚烫的水里煮数分钟,取出放入冷水。用厨房纸巾吸干水份。
Filling
- Melt the butter in a hot pan. Saute the onion, garlic. 热锅煮溶牛油,爆香洋葱、蒜。
- Then add the carrot, minced meat,crab stick, corn kernel, mushroom and stir well. 加入胡萝卜、绞肉、蟹柳、玉米粒、蘑菇兜匀。
- Mix the mushroom soup powder with some water, pour into pan and stir thoroughly. 速溶蘑菇汤粉加少许水搅匀,倒入锅里和其他材料拌匀。
- Season with salt, pepper and oregano. 以盐、胡椒、牛至调味。
Assemble
- Layer the pasta at the bottom. Spread some tomato puree. 放第一层面皮,扫上少许番茄泥。
- Follow by a layer of filling. A layer of cheese on top. 接着铺一层馅料。上面撒一层芝士。
- Repeat step 1 and 2 for the balance pasta and the filling. 重复第一和二步骤直到所有面皮和馅料用完。
- A bunch of cheese on top. 上面洒上大量芝士。
- Bake at 200°C for 20 minutes. 以200°C 烘20分钟。
