Ra-men in Home-Made Teriyaki Sauce




Another simple Japanese cuisine to prepare at home. You can have any Japanese noodle like Udon/Ra-men, and flavor it with Teriyaki sauce which you can make it yourself too. Besides noodle, Teriyaki sauce is applicable in almost any dish like vegetable, seafood, meat, chicken and etc. It basically a combination of soy sauce, mirin (smells like rice wine and tastes sweet as stated in the source i found), sugar. But I've substituted the mirin with ginger wine (the only wine used in my kitchen)  in mine version.

Ingredients

  • Ra-men noodle    拉面
  • fish ball    鱼丸
  • chopped onion    洋葱粒
  • chopped garlic    蒜蓉
  • diced carrot    胡萝卜粒
  • dark soy sauce    黑醬油
  • Sashimi soy sauce    刺身醬油
  • sugar    
  • black pepper    胡椒粉
  • ginger wine    姜酒

  Steps 

  1. Put the dark soy sauce, Sashimi soy sauce, ginger wine, sugar and black pepper into a bowl and stir well. This will be the Teriyaki sauce.    將黑醬油﹑刺身醬油﹑姜酒、糖﹑胡椒粉放入一碗攪勻成铁板烧酱。
  2. Sauté the garlic, onion and the carrot.     爆香洋葱、蒜蓉和胡蘿蔔。
  3. Toss in the fish ball and cook for a while.    加入鱼丸兜一下。
  4. Toss in the noodle and stir well.    倒入麵條拌勻。
  5. Add the Teriyaki sauce and stir for final round.    加入铁板烧酱炒勻即可。
