BBQ Pork Belly (叉烧)




I wanted to try a home made BBQ pork (叉烧) long ago, but I'm not really interested if it is roast in oven. It usually will dry up the meat if lack of experience to handle it. Thus I found a simple recipe from web and most important part is no Oven needed. You just need a wok or pan. And this recipe will ensure the meat is tender and juicy.

Ingredients

  • 500g of pork belly    500 克花肉
  • 15g of chopped garlic    15 克蒜茸
  • 1 table spoon of honey     1 汤匙蜜糖
  • 1 table spoon of oyster sauce     1 匙蚝油
  • 1 table spoon of soy sauce     1 匙酱油
  • 1 table spoon of rice wine    匙米酒
  • 1 table spoon of sesame oil    匙麻油
  • 1 table spoon of LKK Char Siu sauce    匙李锦记叉烧酱
  • 4 table spoon of sugar    匙糖
  • a pinch of black pepper    胡椒粉适量
  • a little red coloring    红色素适量

  Steps 

  1. Wash and dry the pork belly with a kitchen towel. Make few light cuts on both surfaces (don't cut through the meat), this helps better absorption of marinade sauce.    洗净搽干花肉,在两面轻轻划几刀(别割断),较容易腌入味。  
  2. Marinate the pork belly with other ingredients. Set in the fridge over night.    花肉和其它材料混合均匀,进冰箱腌过夜。
  3. Heat up the pan. Pour the marinated pork belly together with the marinade sauce into the pan, and cook for few minutes with high heat.      烧热锅,把花肉和腌汁倒入锅里大火煮数分钟。
  4. Add some water that enough to cover the pork belly. On the lid and braised till half level of water left.    加水直到盖着肉,上锅盖焖至只剩一半水。
  5. Add water again that enough to cover the pork belly. On the lid and braised till water is dried.    再加水直到盖着肉,上锅盖焖至干
  6. Set the BBQ pork belly to cold and cut into thin slices.    叉烧放凉切片即可。
