Golden Roses Steam Buns




Steam bun (包 Bao in chinese) is a Chinese cuisine you can found in any dim sum restaurant, or the stall selling newspaper besides the street. Steam bun can be served with stuffed filling like meat, vegetable, red bean/lotus paste etc. But there are also without any filling which I'm going to share in this recipe.
The method to prepare the steam bun is similar to the bun/bread. The difference is there are steam to cooked instead of oven-bake.

Ingredients

  • 120g of pumpkin    120 克南瓜
  • 250g of all-purpose  flour    250 克普通面粉
  • 1/2 table spoon of baking powder    1/2 汤匙发粉
  • 50 g of custard sugar    50 克砂糖
  • 1/4 tea spoon of salt    1/4 茶匙盐
  • 1/4 tea spoon of instant yeast    1/4 茶匙速溶酵母
  • 60ml of warm water    60 毫升温水
  • 1.5 table spoon of shortening    1。5 汤匙白油

 Steps 

  1. Peel off the skin and dice the pumpkin. Steam the dices until there are soften, mash them.     南瓜去皮切叮,蒸熟再压烂成泥。
  2. Put the warm mashed pumpkin, sifted all-purpose flour and baking powder, sugar, salt, yeast, shortening into a mixing bowl. Pour in half of the warm water and knead into a rough dough by hand. Add the water a little portion by portion, once you feel the dough is a bit sticky then stop.      南瓜泥、筛过普通面粉和发粉、糖、盐、酵母和白油全都倒入盘。接着倒入约一半的温水用手揉成一团,再分次倒入少许剩余的温水。每倒一次就揉均匀至完全吸收才倒另一次。当面团开始湿润有些许黏手就停止加水。
  3. Knead the dough with the mixer until it turns to even and smooth texture.     用搅拌机揉面团至均匀光滑。
  4. Roll the dough into a ball. Let it sit in a warm spot and goes for first proofing, until it grows 2 times bigger (approximate 60 minutes).     把面团搓成球状,置在温暖处发酵胀大至两倍大 (约60分钟)。
  5. Knead the dough to remove the trapped air. Roll the dough into a ball again.     把面团取出排气,搓成球状。
  6. Cut the ball into 8 equal parts and roll into smaller balls.    把面团分8份,在滚成8个小球状。
  7. Take 1 small ball and cut 1/8 of it and roll into small tube. It will be the rose bud later. Divide the balance into 6 parts. Roll out into 6 circular-shapes. These will be the rose petals (in photo 9).    取一份小球割出1/8份搓成小长条,这将会是玫瑰芯。剩余的分6份杆成6圆形,这是玫瑰花的花瓣 (如图 9)。
  8. Line up the 6 rose petals next to each other. The rose bud place at the first petal. Roll them up from the first petal together with the bud to the last one (in photo 10). Cut into half and you have 2 roses.    把6片花瓣排成一行。放在第一花瓣,然后从第一片花瓣包着最后一片 (如图10)。一半得到2玫瑰
  9. Place the rose buns in a warm spot and go for second proofing (approximate 45-60 minutes).    切好的玫瑰包置在温暖处发酵(约45-60分钟)。
  10. Bring the water in steamer to boil. Put in the buns and steam for 12 minutes. Off the heat and with the lid on for another 10 minutes. The steam buns are good to eat now.    煮滚蒸笼的水,再放入玫瑰包蒸12分钟。熄火继续焖10分钟即可。
