Berries Cheese Tarts




Cheese tart is not something new to us, but you must be surprised if i admit that i never taste a cheese tart before. Well, that's because I'm preferred the cheese in savoury instead of sweet. Anyway, it doesn't matter now, coz I'm going to have my very first cheese tart here!! And I'm sure I'm going to love it!!

Ingredients

Tart Crust 

  • 150g of butter (Out from the fridge and keep in room temperature for about 10 minutes)    150 克牛油 (从冰箱取出等约10分钟后再操作)
  • 30g of icing sugar    30 克糖粉
  • 1 egg    1 颗蛋
  • 250g of all-purpose flour   250 克普通麵粉
  • 1 table spoon of milk powder    1 湯匙奶粉

Cheese Filling

  • 250g of cream cheese    250 克奶油乳酪
  • 20g of butter    20 克牛油
  • 1 egg    1 颗蛋
  • 50g of icing sugar   50 克糖粉
  • 2 tea spoons of lemon juice extract    2 茶匙柠檬汁
  • grape/blueberry jam (or any fruit jam that taste sweet and sour)    适量葡萄/篮莓酱 (或其他带酸甜味的果酱)

 

 Steps 

Tart Crust

  1. Place the butter and icing sugar into a mixing bowl. Mix the mixture using hand-mixer until it turns to lighter color.     牛油和糖粉置入一碗﹐用搅拌机打至发白。
  2. Add the egg into the mixture and beat until there are well blended.      加進蛋打勻。
  3. Add the milk powder and stir well.     加入奶粉搅匀。
  4. Sift in the flour and knead it into a dough.    筛入面粉揉成一面团即可。
  5. Chill the dough in the fridge for about an hour.    麵团冷藏1小時。
  6. Grease the tart molds. Place the paper strip in the center of every mold.    塔模抹些油,中间置入一张油纸条以方便把烤好的塔拿起。
  7. Cut the dough into 17 pieces (~28g each) and roll into balls    面团割成17份(每份约28克),揉成球状。
  8. Place a ball in the center of tart mold. Use the finger to press and shape the tart crust.    把一份球面团放再模的中间,以手指按压造型。
  9. Chill the tart crust in the fridge for about 30 minutes.    将塔皮进冰箱冷藏30分钟。
  10. Bake the tart crust at 200°C for 10 minutes.    用200°C烤约10分钟。
  11. Let the tart crust cold down and lift up from the mold.    让塔皮冷却取出。   

Cheese Filling

  1. Place cream cheese, butter, lemon juice extract and icing sugar into a mixing bowl. Beat them for about a minute.    将奶油乳酪、牛油、柠檬汁 和糖粉倒入一碗,用搅拌机打匀(大概1分钟)。
  2. Pour in the egg and beat the mixture until smooth and creamy. This will be the cheese filling.    加进蛋打至光滑。这就是塔的馅料。
  3. Spread some grape/blueberry jam on every tart crust.    塔皮中心涂上一些果酱。 
  4. Fill up the tart crust with cheese filling.    把馅料倒入塔里。
  5. Bake the cheese tart at 150°C for 10 minutes.    以150°C烤10分钟。 
  6. Garnish the cheese tart with any fruit such as strawberry/blueberry/kiwi or anything you like.    最后以喜欢的水果如草莓/篮莓/奇异果装饰。
