Fried rice is an easy yet popular dish in Chinese also Asian menus. You only need the left-over white rice and some side ingredients like meat, egg, seafood, vegetable, peas, onion..... just anything you like.
I seldom to have left-over rice in my fridge, thus I have to cook the rice couple hours earlier. In order not to have the "lumps" (where the rice stick into a ball) in the output, I used to add few drops of cooking oil/sesame oil during rice-cooking. The rice will be "free from each other".
The fried rice looks nice when it's in golden colour, so I'll show you too my way over here.
Ingredients
- white rice 白飯
- egg 蛋
- diced onion 蔥叮
- diced fish ball 魚丸叮
- sliced carrot 胡蘿蔔片
- dried scallop 干貝
- salt 鹽
- black pepper 胡椒
Steps
- Soak the dried scallops into water and keep in the fridge overnight. Drain the dried scallops and shred them into chunks (by fingers) when using. Keep the drained water for later use. 干貝泡水冷藏過夜﹐要煮時隔水拔成絲即可。泡干貝的水留着待用。
- Crack an egg into a bowl, seasoning with salt and the dried scallops drained water, then whisk a little while. Then soak the rice into the egg mixture. Drain the excessive egg mixture for later use if any. 蛋`泡干貝的水和鹽放入碗裡稍打散。飯泡進蛋液一會﹐如蛋液有多余請隔出待用。
- Stir-fried the excessive egg mixture and set aside . 蛋液炒熟備用。
- Sauté the onion and the carrot. 爆香蔥叮和胡蘿蔔。
- Add in the diced fish ball and dried scallops chunks, stir well together with the egg. 倒入魚丸叮和干貝絲﹐跟蛋一起兜勻。
- Add in the egg-coated rice and cook through. Lastly, seasoning with salt (if necessary) and pepper. 加入蛋液飯炒熟.。以鹽(如需要)和胡椒調味。
