There are so much menus you can do with the chicken. But to persuade my boy (food-picker!!) to consume the chicken will be a tough job for me. One of the chicken recipes I used to cook for him is Chicken in Coca-Cola gravy. It is a sweet-sour dish , the gravy tastes like "Pork Knuckles and Ginger Stew" (豬腳醋) if you ever try. Well, he used to buy it because of the "Coca-Cola".
The place to share the ideas and recipes of cooking & baking. You can place order over here too, if you like to have some yummy yet healthier home-made menu in your parties or events. You could leave me a comment or PM me in Facebook if you need any details.

Golden Fried Rice
Fried rice is an easy yet popular dish in Chinese also Asian menus. You only need the left-over white rice and some side ingredients like meat, egg, seafood, vegetable, peas, onion..... just anything you like.
I seldom to have left-over rice in my fridge, thus I have to cook the rice couple hours earlier. In order not to have the "lumps" (where the rice stick into a ball) in the output, I used to add few drops of cooking oil/sesame oil during rice-cooking. The rice will be "free from each other".
The fried rice looks nice when it's in golden colour, so I'll show you too my way over here.
Mango Sago Dessert (楊枝甘露)
Mango is one of the popular topical fruit. There is bunch of mango's recipes you can get easily especially in Asia. It's yummy even you eat it on its own.
One of the common desserts you can found in Chinese restaurant is Mango Sago. I got few mangoes from my aunt on last Sunday, so I decided to make the said dessert in simpler way.
If you want a tastier and creamier output, you may add the evaporated milk or coconut milk to the recipe.

Chiffon Cupcakes with Creamwell Frosting
We are having a small family-gathering at grandpa's house today to celebrate the Father's Day. Thus I bake them some mini chiffon cupcakes with simple frosting by using Creamwell. Creamwell is a shortening-like butter/margarine, it is easy and stable to decorate on any cake. Besides that, it is cheaper than any other decorating cream like whipping cream or cream cheese. So you can have one in your shopping list if you plan to have your own home-made frosting cakes.

Fastest & Simplest Way to have you creamy congee (rice porridge)
Congee or rice porridge in Chinese always serve as the simplest comfort food. It made up with two main ingredients: rice and liquid. The rice I preferred is Sushi/Japanese rice which is easy to get the soft and sticky texture after thoroughly cooked. The liquid I used either the chicken/dried anchovies (ikan bilis)/pork ribs/dried scallops stock, which adding flavour to the congee.
But one thing really bothering me is the time it takes to cook the rice to thick and creamy, which almost 1 to 1.5 hours. Anyway I found a better way to shorten the cooking hour.
I will first wash and drain the rice, soak into water for an hour. Then pop in to the freezer overnight. When you want to cook the congee, just take out from the freezer and pop in to the bubbling-boiled liquid. In just 5-10 minutes you will found that the rice has turn to thick soften congee.
Well, what are you waiting for? Have a try today!
