18/5/2014 was my younger brother-in-law biggest day in his life~ he is getting married. So i gave him something special for his wedding~the red-velvet cupcakes with cream cheese frosting.
Ingredients
Group A
- 5 cups of self-rising flour 5 杯自发粉
- 4 table spoons of cocoa powder 4 汤匙可可粉
- 2 tea spoons of soda bicarbonat 2 茶匙苏打粉
Group B
- 3 1/3 cup of custard sugar 3 1/3 杯砂糖
- 1 cup of butter 1 杯牛油
- 2 tea spoons of vanilla essence 2 茶匙香草精
- 2 cups of butter milk (or replace with 2 cups of milk + 2 table spoons of vinegar/lemon extract, prepare 5 minutes earlier before use) 2 杯白脱牛奶/酪奶 (可以2 杯牛奶加2 汤匙醋/柠檬汁,请预早5 分钟准备)
- 4 eggs 4 颗蛋
- 4 table spoons of red coloring 4 汤匙红色素
- 2 tea spoons of vinegar 2 茶匙醋
Cream Cheese Frosting
- 450g of cream cheese 450 克奶油乳酪
- 54g of butter 54 克牛油
- 1 4/5 table spoon of lemon extract 1 4/5 汤匙柠檬汁
- 1 4/5 table spoon of vanilla essence 1 4/5 汤匙香草精
- 1 4/5 table spoon of milk 1 4/5 汤匙牛奶
- 200g of icing sugar 200 克糖粉
Steps
Cake
- Sift the Group A 3 times. Group A粉类过筛3回。
- Beat the butter and 1/3 of sugar. When the sugar dissolved, add another 1/3 of sugar and beat. Add the balance when the sugar dissolved. Beat the mixture until all of the sugar dissolved and turn to whitish. 把牛油和1/3砂糖搅匀至糖溶化。加入另1/3糖继续搅溶,再加入最后1/3糖继续搅打至糖完全溶化和转白。
- Crack an egg and pour into the butter mixture. Let the egg blended fully before add the following eggs. Repeat until all the eggs added in. 打入一颗蛋搅匀后,继续打入第二颗蛋搅匀。打入第三颗蛋继续搅拌。
- Add the red-coloring and vanilla essence. Beat the mixture till light and fluffy. 加入红色素和香草精。继续搅拌面糊直到变轻盈膨胀。
- **Fold-in 1/3 of the Group A into batter. Then follow by 1/3 of butter milk**. Repeat the part ** 2 times for the balance Group A and butter milk. 一边转盘一边划十字拌入1/3粉类,接着1/3酪奶。 重复以上步骤直到所有粉类和酪奶拌入均匀。
- Finally add the vinegar. Stir the batter gently to avoid the lumps remain in your cake. 最后加入醋。轻轻搅拌至面糊没块状为止。
- Pour the batter into paper baking cups. 把面糊倒入纸杯。
- Bake the cakes at 180°C for 15 minutes, or until fully-cooked. 放入烘炉以180°C烘15分钟,或完全熟透。
Cream Cheese Frosting
- Put all the Cream cheese frosting's ingredients into the mixing bowl. 把cream cheese frosting材料倒入盘里。
- Beat the ingredients till light and fluffy. 搅拌所有材料至呈轻盈膨胀的状态,即是裱花用的奶油。
Final Touch-up
- Piping the cream cheese frosting on top of every cupcake. 把奶油挤在蛋糕上。
