Tuna Buns
Ingredients
Filling
- tuna flakes 吞拿魚肉碎
- sweet corn kernel 玉米粒
- diced garlic 蒜(切丁)
- diced onion 洋葱(切丁)
- salt & pepper 盐和胡椒
- cheese 芝士
- Oregano 牛至
- mayonnaise 美奶滋
Bun Dough
- 90g of high-protein flour 90 克高筋面粉
- 90g of cake flour/ low protein flour 90 克低筋麵粉
- 85g of milk 85 克牛奶
- 30g of egg (slightly beaten) 30 克蛋 (稍微打散)
- 25g of butter 25 克牛油
- 25g of custard sugar 25 克幼糖
- 1/2 + 1/4 tea spoon of instant yeast 1/2 + 1/4 茶匙速溶酵母
- 1 table spoon of milk powder 1 大匙奶粉
- 1/2 tea spoon of salt 1/2 茶匙盐
Steps
Filling
- Mix all the ingredients of Filling except cheese. Set aside. 将filling材料(除了芝士)混合一起待用。
Bun Dough (Bread Maker)
- Place the sugar, salt, egg, milk into the bread pan, then follow by high-protein flour, low-protein flour, milk powder, butter and yeast on most top. To avoid the yeast been 'killed' by the salt, make sure they are separated by a layer of flour. 糖、盐、蛋、奶倒入烤盘里, 接着放高和低筋面粉,奶粉:最表面放牛油和酵母。盐和酵母之间用粉隔开以免酵母直接接触盐而失效。
- Choose 'Dough' mode and start. My bread maker took 20 minutes to knead and 70 minutes to proof. 选‘Dough'程式后启动。我的面包机20分钟搓70分钟发酵。
Assemble
- Move the dough out from the bread pan. Divide the dough into 8 portions and roll into balls. 把面团取出排气,揉成球状。 再分割8份滚圆。
- Take 1 dough and do the steps as in photo 5 to 7. Do the same for the rest. 取一份面团如图5-7搓成长状。其余的跟着同样步骤做。
- Place them in a warm spot and go for second proofing (approximate 45-60 minutes) 面包胚置温暖处作第二次发酵 (约45-60分钟)。
- Place some cheese in the middle of each dough from step 3. 在已第二次发酵的面包胚中间放上芝士。
- Egg wash every dough surface. 面包胚扫上蛋液。
- Scoop some tuna filling on top of the cheese. 舀些吞拿魚馅料置在芝士上。
- Bake at 180°C for about 8-10 minutes or until golden brown. 以180°C烘约8-10分钟或转金黄色。
